grilled asparagus
Pressed against the clad plate, asparagus retains just the right amount of moisture while achieving a crisp, tender bite. Finish with hollandaise for a rich, decadent touch.

Ingredients

| 4 asparagus stalks |
| Olive oil, as needed |
| Salt, to taste |
| Black pepper, to taste |
| Hollandaise Sauce 1 tbsp mayonnaise 1 egg yolk 1 ½ tbsp melted unsalted butter 1 ¼ tbsp lemon juice Salt, to taste |

Directions
- Set the temperature to 400°F. In a bowl, combine the mayonnaise and egg yolk. Slowly add the melted butter, salt, and lemon juice while mixing until smooth.
- Brush olive oil evenly onto the asparagus. Spread some olive oil on the preheated griddle. Add the asparagus and season with salt and pepper.
- Press down gently on the asparagus with the spatula. Once one side has browned, flip the asparagus and brown the entire stalk.
- Cut the asparagus into 3 parts. Plate the asparagus, drizzle with hollandaise sauce, and enjoy!
